When I was committed to one spot over the last few years I dove deep into the garden and grew really great varieties of celery - it will change your world once you grow very flavorful versions. Basically I had never had celery it seems.
You'll have a bunch of leaves and they'll be so good (even if you get them more farm direct at a market or anywhere they're showing off the leaves with the stalks. PINK Chinese (mine were from Rare Seeds) is my favorite - or Amsterdam variety (also from Rare Seeds).
One of those wins is dehydrating the leaves and then grinding them up and blending with good quality salt from Jacobsen Salt Co. I used Pure Kosher Sea Salt.
There is something very 1980's Neiman Marcus cafe about the salt in the BEST way. Makes a fantastic gift since you really can't buy this stuff in any worthwhile form in most parts of the world.
