Æmbers Mar Y Tierra Caramel (Roberto Madero, Chef)

Salty, slightly sweet and all umami. I had this unique caramel sauce at a next gen roadside spot in Todos Santos and somehow got the chef to send me the recipe. Three ingredients no refined sugar.

It’s easy to make but cranky about the details - takes about 10 min and it’s addictive in a less bad way.
